Dsm-firmenich announces “Milky Maple” as 2025 flavor of the year 2025

GLOBAL – Dsm-firmenich has named Milky Maple as its flavor of the year for 2025, combining the creaminess of milk with the natural sweetness of maple.

According to dsm-firmenich, the rise of maple as a global phenomenon reflects its transformation from a North American breakfast staple to a versatile ingredient influencing culinary trends worldwide.

While traditionally featured in syrups, maple’s role has expanded to baked goods, savory dishes, and beverages across Europe and Asia.

The company noted that maple’s growing appeal lies in its ability to evoke coziness and familiarity while maintaining a natural sweetness that resonates with health-conscious consumers.

Jeffrey Schmoyer, VP of Human Insights at dsm-firmenich, highlights that Milky Maple reflects emerging cultural and consumer signals that transcend geographical boundaries.

“Maple is evolving from a regional favorite to a global flavor phenomenon. Its ability to offer a feeling of coziness and its versatility has driven its momentum across diverse cultures and cuisines,” Schmoyer stated.

He added that the combination of milk and maple aligns perfectly with trends emphasizing nostalgia and premium indulgence in food products.

Dsm-firmenich also pointed to milk’s consistent global growth as a flavor, particularly in Asia, where it complements maple’s sweetness.

Schmoyer highlighted that milk’s creamy and comforting profile has seen a steady rise in non-dairy applications, including baked goods and snacks.

The origins of this trend can be traced to Asian and Latin American markets, where milk as a flavor is especially pronounced. Milky-flavored cookies and candy blend the familiarity of milk with indulgent snack formats, aligning perfectly with consumer desires,” he explained.

The Milky Maple flavor launch coincides with Pantone’s color of 2025, Mocha Mousse, signaling indulgence and comfort as major trends for the upcoming year.

To enhance Milky Maple, dsm-firmenich leverages its TasteGem 3D Essentials technology, ensuring an authentic maple taste that appeals to modern palates.

For plant-based applications, innovations such as Smart Milk flavors and Dynarome Da mimic the creamy texture and rich flavor of conventional milk, expanding the flavor’s versatility across product categories.

Mikel Cirkus, senior director of Foresight & Design at dsm-firmenich, pointed to unique inspirations shaping maple’s evolution.

He noteed the influence of the Candy Cap Mushroom, a natural forest product prized for its maple-like aroma and ability to elevate baked goods, confectionery, and even beer.
